My good friend Christy gave me this awesome book called "The Sneaky Chef" so today I decided to try a recipe for "No Harm Chicken Parm". First I had to make three different purees, homemade breading and "Easy Homemade Pasta Sauce". It took me about four hours to get it all done including the chicken but now I have a bunch in the freezer for later! As I was making it I was astonished to note that the chicken turned out to be green (because of the green puree) and my sauce turned out to be orange (because of the orange puree).
I was dubious to how Chris was going to handle this so I warned him!:) But.....
....it was pretty good!! Chris, my toughest critic, gave it a 3 out of 10 because it wasn't crispy. :) But I would give it a 7 and Emily ate it and got a whole boatload of veggies so that is good!!! I froze some for later so come on up and try it out!! It ended up being totally organic which has never happened in this house before!
Here is all the puree and pasta sauce I now have saved in the freezer.
